Involves depulping and washing cherries, then drying them on raised beds. Emphasizes the beans intrinsic qualities.
The best ripe cherries are selectively picked and placed directly on the drying beds with the fruit intact
Cherries or pulped beans are sealed in oxygen free tanks. Controlled fermentation develops unique compunds

We currently have Batian, Ruiru - 11 & Grafted, SL - 28 & 34.
We employ fully-washed, naturals, anaerobic methods as well as accommodating customer- specific requests such as Honey Coffee.
